First thing you should do is a leak down test. Find out the overall health of your engine. If it comes back within acceptable limits, then you can move forward with the maintenance items a 91 will most likely need. How many miles are on it and what symptoms are you experiencing? The reason everyone is posting to buy a Z already maintained and in good condition is they are speaking from experience. You can easily spend $2,000 to replace "maintenance" items. Add in some unexpected replacement parts and you easily move into the $3,000 - $4,000 realm. Add upgrades or performance parts to that equation and the sky is the limit. It can become very expensive, very fast so be prepared. If you aren't doing the work yourself, prepare to spend plenty more on labor, the costs I listed were for parts only.
